Quick cookies are proof that good, home-made sweets do not have to be time-consuming and difficult to prepare. All you need is butter mixed with sugar, eggs, a bit of vanilla extract and dry ingredients: flour, corn starch, baking powder, salt and coconut flakes. Everything is mixed together without any complicated steps. The cookies formed from the mass go into the oven for only 12 minutes. After baking, it is worth pouring melted chocolate over them and giving them a moment to set. Effect? Crispy, soft inside cookies with a distinct vanilla and coconut flavor that are hard to resist.
Ingredients:
- 210 g of butter,
- 200 g of brown sugar,
- 2 large eggs,
- a few drops of vanilla extract,
- 280 g of whole grain or wheat flour,
- 2 teaspoons of corn starch,
- a teaspoon of baking powder,
- a pinch of salt,
- 200 g coconut flakes,
- 300 g of dark or dark chocolate for drizzling.
How to do it:
1. In a bowl, mix the sifted flour with cornstarch, baking soda and salt. Cream the soft butter with a mixer, then start adding sugar to obtain a light and fluffy mass. Then add the eggs (one by one) and vanilla extract. Then add the flour mixture and finally the coconut flakes. Mix the dough with a spoon or knead it. Wrap them in cling film and put them in the fridge for 30 minutes.
2. After this time, take the dough in your hands, form balls, flatten them and place them on a large baking tray lined with baking paper. You can also roll out the dough on a pastry board and cut out cookies with a cookie cutter. Place the baking tray with cookies in the oven preheated to 190°C for about 12 minutes (the edges should be lightly browned). After baking, set the cookies aside to cool.
3. Finally, pour melted chocolate over the cookies or dip them halfway in chocolate. Then let the chocolate set and serve.
