The Serra do Caldeirão Gastronomic Confraternity organized the first edition of the Galo de Entrudo event on March 1st, an initiative that brought together confreres, representatives of other confraternities and members of the local community around traditional Algarve gastronomy.
The initiative was attended by around 150 participants, including confreres from the host entity, representatives of regional and national confraternities and various inhabitants of the region, in a gathering marked by gastronomic and cultural sharing.

According to the Serra do Caldeirão Gastronomic Confraternity, “this first edition was postponed for a week due to the death and funeral ceremonies of Dr. José Carlos Rolo (former mayor of Albufeira and historic founder and confradic leader of several Confraternities in the region)”.
Gastronomic tradition linked to Shrovetide
The brotherhood recalls that “the tradition of the Entrudo Rooster in Portugal is a gastronomic and cultural practice rooted in Carnival (Entrudo), symbolizing the farewell to the pleasures of meat before Lent”.

According to the organization, “this traditional dish, common in the Algarve, Alentejo and areas of the North, uses homemade rooster in stews or cabidelas, celebrating rural products”, keeping alive a culinary heritage associated with carnival festivities.
During the meeting, the main dish was prepared following the Algarve tradition. The brotherhood explains that “in this event the rooster was made in the traditional Algarve way, that is, stew”.
Flavors of the territory and musical entertainment
In addition to the main dish, participants had the opportunity to taste various regional products. According to the organization, “in addition to the main figure of this dish, those present were also able to taste delicacies from our territory such as sausages, fresh and cured sheep and goat cheeses, crushed olives, carrot preserves, corn porridge, finishing the meal with the flavors of golden slices, fried doughnuts, Algarve orange pie accompanied by traditional chocolateira coffee and medronho brandy”.

The gathering also included musical entertainment. The fraternity says that “this lunch was enhanced by the sounds of the accordion of José Manuel Pasadinhas, Bruno Aguiar and the voice of Vitória Nascimento”.
The initiative had the support of local entities. As indicated by the organization, “this event had the support of the Querença Parish Council and the Casa do Povo de Querença”.
He also said that “the next edition in 2027 has been guaranteed”, reinforcing the intention of continuing this gastronomic meeting.
