The Cilantro restaurant, located at the Hilton Vilamoura As Cascatas Golf Resort & Spa, presents a new summer menu marked by the valorization of local products and inspiration from the flavors of the Algarve. The proposal appears as an evolution of the space’s gastronomic concept, reinforcing the connection with the territory and the seasonality of the ingredients.
According to the team responsible, the new offer seeks to reflect “the essence of the region”, with dishes that emphasize freshness, lightness and authenticity.
Local ingredients and inspiration in the Ria Formosa
The new menu is inspired by the Algarve sea and the surrounding Ria Formosa, integrating ingredients from local producers and respecting the natural product cycles.

The proposal translates into a gastronomic approach that combines tradition and contemporary times, with emphasis on dishes that reinterpret classic recipes with current techniques.
Dishes combine tradition and innovation
Among the suggestions presented are a fish soup with mint, contemporary versions of dishes with eggs and ham, as well as fish options that show the region’s maritime influence.
For dessert, the highlights are creations that use typical ingredients, such as carob and almonds, associated with citrus aromas.
Vegetarian options and environmental concern
The menu also includes a component dedicated to vegetarian and vegan food, representing around 15% of the available options.
According to the restaurant, this investment aims to “respond to dietary diversity and promote more sustainable practices”, following current trends in restaurants.

The gastronomic proposal is led by chef André Simões, who highlights the regional inspiration of the new menu. “The inspiration for this new menu comes from the Algarve, its light, its sea and the richness of its products”, he says.
The person responsible adds that the objective was “to create dishes that respect the essence of the ingredients, working with them in a light and contemporary way”.
Own production reinforces the freshness of the dishes
The new menu also includes products from an organic garden associated with the space, including aromatic herbs and vegetables, contributing to the freshness and proximity of the ingredients used.
