Recipe for shortbread cookies with cranberries is one of the simplest you can imagine. Just a few ingredients and 10 minutes of work are enough to enjoy this delicious, sweet snack. Thanks to this, you can prepare them whenever you feel like it, without having to visit the nearest store. The addition of dried fruit breaks the taste of the cookies and adds a pleasant sourness.
If you don’t have cranberries in your kitchen or pantry, you can also use roraisins, plums, apricots, nuts or anything else you have on hand. They will also taste great with crushed chocolate or colorful lentil candies.
To prepare cookies, you will need:
- 260 g of wheat flour,
- 240 g of butter,
- 100 g of powdered sugar,
- 50 g dried cranberries,
- 1 teaspoon of vanilla extract,
- ¼ teaspoon of salt.
Sift flour and salt into a large bowl. In a separate bowl, cream the butter and sugar until light and fluffy. Add dry ingredients to wet ingredients and mix until combined. Chop the cranberries into smaller pieces and add them to the dough.
Cover the bowl with a cloth and place in the refrigerator for 20-30 minutes. Then transfer the mass to the pastry board and roll it out to a thickness of approx. 0.5 cm. Cut the molds into the desired shapes. Place the cookies on a baking tray lined with paper. When all the cookies are ready, put the baking tray in the fridge for about 10 minutes.
Preheat the oven to 180 degrees Celsius. Bake shortbread cookies with cranberries for approx. 10-12 minutes, until the edges are lightly browned. Remove the baked goods and let them rest for 5 minutes before transferring to a wire rack.
Store cookies in an airtight container at room temperature. Use them within a week.
