In theory, pierogi dough is easy to make. All you need is flour, water, oil and possibly an egg. So why does it often come out too hard or rubbery? The secret lies, among other things, in the recipe and appropriate proportions. However, if the ingredients are not good, even the best recipe will not help.
The ingredient that has the greatest impact on the consistency of dumpling dough is flour. The right choice will result in whether the resulting mass will be hard. Its type and type will be important.
The best dough for dumplings is made from white wheat flour. A delicacy made with whole grain flour will always be slightly harder and will need more water. It will be a better substitute for white wheat flour spelled flourwhich will give the whole thing an interesting flavor.
Also pay attention to the type. Among white flours, Poznań wheat flour type 500 is the best for dumplings. The dough is easy to form and becomes elastic. After cooking, however, it is soft and light.
I have tested many different recipes in my life, but this one recipe for cake for Magda Gessler’s dumplings are the best. The proportions are perfect, so the dish turns out great delicate, softand after biting almost melts in your mouth. Try it for the upcoming Christmas Eve and you won’t be disappointed.
Ingredients:
- 500 g of wheat flour type 500,
- 200 ml of well warm water,
- a pinch of salt.
How to do it:
Sift the flour through a sieve on the pastry board. Once you have sifted everything, make a small well in the flour and pour half of the warm water into it and season with salt. From ingredients start kneading the dough quickly. After a while, start gradually adding the rest of the water, kneading constantly.
The dough will be kneaded when it will stop sticking to your hands. Then form it into a smooth ball, wrap it in a cotton cloth and set aside for 10 minutes. Additionally, you can cover them with a hot bowl or pot.
The dumpling dough according to Magda Gessler’s recipe is ready. Now roll them thin, cut out circles with a glass, fill with your favorite stuffingform it into a traditional dumpling shape and cook it.
