Lentil soup with tomato puree and paprika: Looks like a goulash

Legumes are an excellent source of many beneficial substances for the body, so we should include them in our diet quite often. That’s why it’s good to have a stock of interesting recipes that will always make them an interesting novelty. For example, lentil soup with tomato puree is literally a delicacy.

Why should we eat legumes? Their low glycemic index ensures a slower absorption of the nutrients we get from them, and thus also keeps us full for a longer period of time. This will be especially appreciated by those of us who have decided to lose a few extra kilos.

In addition to having a positive effect on blood sugar levels, legumes provide the body with the necessary fiber and plant proteins. But that’s not all – antioxidants, magnesium, zinc, selenium, but also calcium or vitamins, especially group B – these are also significant positives that these foods offer to humans.

Unusual soup

If you don’t know what else to prepare from legumes, you can try a slightly unusual soup with the addition of tomato puree and peppers. Traditional food gets a completely new look and taste that will surely interest you. In addition to lentils (use red so that the soup is ready quickly), you will of course also need tomato puree to prepare it, as well as onion, garlic, plain flour, red pepper, pepper, a little milk or cream, salt and then just water and a spoonful of good quality oil .

It’s not a science

We will cook the soup as we are used to in most cases – i.e. let the finely chopped onion vitrify in oil, add flour to prepare a light broth, which we then mix in a little cold water. Once it is smooth, we can add one liter of warm water to reduce the time to prepare the soup even more. At this moment, it is already time for 150 grams of red lentils and spices, which we have already prepared according to the list.

Finally, add the puree

Once the lentils are sufficiently cooked, which will be in about ten minutes, we can add two spoons of tomato puree to the soup and let everything continue to boil. Finally, add a little milk, or even better cream, to soften it, season and add salt to your liking and serve.

It goes without a roux

Many of us, for whatever reason, prefer to avoid flour, and so prefer not to even venture into thickened soups. Even in that case, we don’t have to give them up if we use the old proven trick with a fairly ordinary potato. The beginning of the recipe will be the same as in the first variant, only we will not put flour on the onion. In short, we add lentils and one potato cut into really small pieces. When the lentils and potatoes are cooked, we take out part of the lentils with a strainer so that we can return them to the soup afterwards, but we mix the rest – that is, the potatoes and part of the lentils – in a saucepan. That’s the whole magic of a thick sauce without roux. You will see that it is nothing complicated and all diners will thank you, who will appreciate the flourless dish.
