Pan Cake from Monchique could become Intangible Cultural Heritage

The Portuguese State began the public consultation process for the registration of the Bolo de Tacho de Monchique, in the Algarve, in the National Inventory of Intangible Cultural Heritage, it was published this Monday in the Diário da República.

Bolo de Tacho, also known as Bolo de Maio or Bolo de Milho, is a typical sweet from the cuisine of Monchique, the municipality where the recipe and preparation originate.

The public consultation will last 30 days and the public Cultural Heritage Institute decides on the request for an inventory of the process within 120 days after the conclusion of the public consultation period, according to a notice published in the Official Gazette of the Union.

The elements contained in the inventory process were not yet available this morning for consultation on the Cultural Heritage website ().

According to the Algarve Museum Network page, Bolo de Tacho was normally made exclusively in May, as it constituted the main element of the lunches or snacks that people took to the traditional “desmaios” (picnics) that took place in the Monchique mountains in 1st of that month.

This sweet is characterized by the use of four base ingredients that result from local production: corn flour, olive oil, honey and lard.

To these, other elements are added according to personal taste (coffee, cocoa powder, spices, lemon or belle luísa tea), the quantity of which will make the flavor and texture of the cake differ from recipe to recipe.
