Pineapple cake with raspberries This is a unique dessert that combines juicy, sweet, tropical fruit with a sour hint of raspberries, creating the perfect harmony of flavors. Simple to prepare, a light and moist dough, it is perfect for warmer, spring days or as a sweet coffee snack. You can also serve them during a party in a family circle. He will definitely taste small and large gourmands.
Before you start implementing the recipe, prepare the right sheet. It works best cake tin with a diameter of 23 cm.
For preparation pineapple cakeyou will need:
- 400 g of canned pineapple slices,
- 200 g of wheat flour,
- 150 g cukru,
- 100 g of butter,
- 100 ml canned pineapple juice,
- 50 g of brown sugar,
- 2 large eggs,
- 1.5 teaspoons of baking powder,
- A handful of raspberries.
Put the bottom of the mold with a diameter of 23 cm with baking paper, then spread with a spoonful of dissolved butter and sprinkle with brown sugar. Place the pineapple slices on sugar. Set aside the mold, and in the meantime heat the oven to 180 degrees Celsius.
Place the butter with sugar in the mixer bowl and grate into a fluffy mass. Then add eggs in turn, stirring the remaining ingredients all the time. Finally, pour the pineapple juice and mix briefly.
Add sifted flour with baking powder to wet ingredients. Mix the whole until a smooth and homogeneous mass is obtained. Do not mix too long so that the dough remain light and fluffy. Pour the mass on previously prepared pineapples in the form. Spread the dough evenly in a baking tray and smooth the top. Bake the dough for 35-40 minutes until it becomes golden and the stick stuck in the middle will be dry. After baking, put the dough to cool for a few minutes, and then turn the mold on the plate so that the pineapples are on top. Decorate the dough with fresh raspberries, putting it in the center of pineapples.
