Vegetable casserole This is a tasty Mediterranean style dish. In addition to pasta, you will find eggplant, tomatoes, peppers, olives and capers in it. The addition of feta cheese will turn up the taste, giving the dish character. All ingredients combine sauce prepared on the basis of tomato passage. The dish is perfect for a healthy dinner, it also tastes great the second day.

The vegetable casserole is a vegetarian dish. To prepare this recipe, you will need:

  • 200 g of pasta,
  • 300 g eggplants,
  • 100 g cherry tomatoes,
  • 1 onion,
  • 1 red pepper,
  • a handful of green olives,
  • 1 tablespoon of capers,
  • 60 g of tomato puree or passata,
  • 100 g sera fat,
  • 2 tablespoons of white wine vinegar,
  • 50 g of pini nuts,
  • 1 flat teaspoon of Provencal herbs,
  • Salt and pepper.

Cut the eggplant into cubes and salt, set aside for 10 minutes to get rid of the bitterness, then rinse and dry with a paper towel. Peel the onion and cut into feathers, and the peppers into thin stripes. Cherry tomatoes cut into halves and cut the olives into slices. Cut the feta cheese into cubes and roast the pine nuts in a dry pan.

Cook Al Dente pasta in salted water, according to the instructions on the packaging. Strain and set aside.

Heat the oil in a large frying pan and fry the onion for about 2 minutes. Add eggplant and peppers, fry for 5 minutes until it softens. Add olives, capers and cherry tomatoes and fry 3 minutes. Pour in wine vinegar and tomato puree, season with salt, pepper and Herbes de Provence. Mix and cook on low heat for another 3-4 minutes.

In an ovenproof dish, mix the cooked pasta with fried vegetables. Add chopped feta and mix gently. Sprinkle the top with roasted pini nuts. Heat the oven to 180 ° C (top-down). Put the casserole and bake for 15-20 minutes until the cheese is slightly browned.
