This reflection was made by Luis Montielduring a conference with Francisco Tovar held at the Faculty of Medicine of the Complutense University of Madrid (UCM).

Scientists also highlighted the presence of essential amino acids such as leucine, isoleucine and valine, which promote muscle mass synthesis and prevent catabolism, glutamine and tryptophan; and arginine, which enhances vasodilation and Improves cardiovascular resistance.
In addition, the first three – Aleucine, isoleucine and valine – contribute to the mental well-being and concentration during training.

All of this is based on an investigation conducted by the Institute of Food and Nutrition Science and Technology of the Superior Council for Scientific Research in Spain (ICTAN-CSIC), which concluded that the daily consumption of 40 grams of Iberian ham for 12 weeks has benefits for athletes.
Subsequently, both teachers said that the Iberian ham has a Nutritional profile superior to other cured meatswhich may contain high levels of saturated and additive fats.
