Ingredients:

  • 700 ml of water;
  • 4 carrots;
  • 1 onion;
  • 2 cloves of garlic;
  • 1 teaspoon of olive oil;
  • Spices: salt, pepper as desired.

Preparation:

To start with, prepare vegetables: wash the carrots, peel and cut into 2 cm pieces. Peel the onion and garlic, and then cut finely.

Put the onion and garlic into the hot pot with olive oil – fry them for a few minutes, stirring often. Then add carrots and pour water. Simmer on low heat under cover for about 10-15 minutes. Vegetables must soften.

Blend the carrot soup, you can possibly add some water if it comes out too thick. Finally, season with salt and pepper and stir it. It tastes best with fresh bread or garlic croutons.
