Clafoutis is best to do with plums Hungarian, which are mature, soft, but unwell. Their interior is fleshy, but it does not fall apart during baking, but in taste we sense natural sweetness with a hint of acidity.
Nothing prevents you from using the “Stanley” plums, usually used for compotes, plum jam and tinctures for this dough. Then the taste of the cake will be even better.
However, hard and immature fruits are not suitable for cakes, which are not sufficient sweet. So choose plums with a slightly wrinkled skin – their flesh easily leaves the stone.
Ingredients:
- 700 g of plums;
- 200 ml of milk;
- 100 ml of cream 30 percent;
- 150 g cukru;
- 130 g of wheat flour;
- 4 eggs;
- 1 lemon skin;
- 1 teaspoon of vanilla extract;
- A pinch of salt.
Preparation:
Take all the ingredients out of the fridge beforehand so that they have room temperature. In turn, heat the milk in a saucepan and add cream and vanilla extract to it. Cut the plums into halves and remove the seeds from them. Then place them on a cake tin previously lined with baking paper.
In the next step, beat the eggs with sugar to a light and fluffy mass – It usually takes about 7 minutes. Then reduce the mixer turnover and add flour and a pinch of salt in batches. Mix only to combine the ingredients.
Then add milk with cream and vanilla extract – mix the whole slowly. Finally, mix the lemon zest.
Pour the prepared mass on the plums. Clafoutis bake in an oven preheated to 180 degrees for about 30 minutes. The dough must cut off and brown slightly.
Suggestions for providing:
Clafoutis with plums should be sprinkled with powdered sugar, brown sugar or cinnamon. You can also pour this dough with honey or maple syrup. It tastes great hot with a knob of vanilla ice cream.
