As mentioned, in this recipe we do not use loomers, i.e. baking powder or baking soda. The flour is also unnecessary.
What ingredients do we need to make a fluffy cheesecake without flour? Here is the list:
- 200 g butter 82 percent;
- 200 g mascarpone cheese or cottage cheese;
- 200 g cukru;
- 6 eggs;
- 1 tablespoon of lemon juice;
- 1 teaspoon of vanilla extract;
- A pinch of salt.
To make a fluffy cheesecake without flour, at the beginning dissolve the butter, heating them in a saucepan. Set aside to cool.
Then separate the protein from the yolks and place them in two separate, clean, dry bowls. Add a pinch of salt to proteins and beat them to a stiff foam – thanks to this the dough will come out light and fluffy.
In turn, beat the yolks with sugar to a light, fluffy mass and add to them cooled butter, lemon juice, vanilla extract and mascarpone cheese, or cheese squeezed from excess water. Gently mix the protein foam into them with a spatula
Pour the prepared mass into a 24 cm diameter cake tin, lined with baking paper. Cheesecake bake in an oven preheated to 160 degrees for about 40-45 minutes. The baking must come out of the elastic, of a golden color.
Finally, put the dough in the form to cool completely. Then put them in the fridge for a few hours so that it cools down.
Fluffy cheesecake without flour should be sprinkled with powdered sugar before serving. You can also pour it with white or dark chocolate topping and decorate with nuts, almonds or fresh mint leaves.
