A forgotten dessert from Austria: Imperial jerky is easier than pancakes, and tastier

Imperial jerky belongs to those desserts that have something special in them and yet are so simple. Just a few basic ingredients that everyone has at home, and a fluffy, butter-scented miracle will be created in no time.

When we think of imperial jerky, most of us think of the smell of butter, caramelized sugar and fluffy dough dusted with powdered sugar. This one known as Kaiserschmarren, is said to have been created completely by accident, as a failed pancake for Emperor Franz Joseph I himself. And because it enchanted him with its lightness and taste, it became a dessert that is still among the most popular sweets in Austria and here.

Unlike classic pancakes, the dough is torn into pieces during baking, resulting in a dessert with a beautifully irregular structure and golden crispy edges. Imperial jerky is fluffy, smells like butter and goes well with fruit. , jam or plum compote. At the same time, its preparation is surprisingly simple and even those who do not feel confident in the kitchen can handle it.

Raw materials:

  • 4 eggs
  • 250 ml of milk
  • 130 g plain flour
  • a pinch of salt
  • 1 vanilla sugar
  • 2 tablespoons of granulated sugar
  • 2 tablespoons raisins (preferably soaked in rum)
  • butter for frying
  • powdered sugar for sprinkling

Procedure:

Separate the eggs into yolks and whites. Beat the egg yolks with sugar and vanilla sugar until frothy, then add milk and sprinkle flour with a pinch of salt. A smooth pancake-like batter will form. In another bowl, beat the egg whites until stiff peaks form and carefully fold them into the batter. It is thanks to them that the jerky will be so fluffy.

Melt a piece of butter in a large pan, pour in the batter and fry over a low heat until golden. As soon as the bottom side is baked, tear the dough into smaller pieces with a turner and let them turn golden on the other side as well. You can sprinkle raisins at the end.

Serve while still warm, generously sprinkled with powdered sugar. It tastes great with apple puree, jam or plum, blueberry or apricot compote.
