Have you recently fried pork chops for Sunday dinner and they came out as hard as your sole? Or maybe they weren’t crunchy or had little flavor? It’s time to change the way they are prepared. Just a few extra minutes of work is enough to improve the quality of the cutlet. It will literally taste like grandma’s.
Every grandmother soaked it before frying in milk so that the meat does not become dry and remains delicate and aromatic. Two hours of soaking is enough, although it is best to do it overnight.
Why does this trick work? Milk softens the structure of meat fibers and retains moisture in them. We also recommend adding spices, such as onion, garlic, allspice and bay leaf.. Then the pork chops will be exceptionally aromatic.
After soaking, place the meat on a paper towel and dry it. Then we proceed as in the standard recipe – season the cutlets with salt and pepper, bread them and throw them into the pan.

In addition to soaking pork chops in milk, we can use one more trick, namely: piercing the meat with a fork immediately after breaking. Thanks to this, channels will be created in its structure.
Therefore, the spices will penetrate the meat fibers better, and during frying the heat will spread evenly throughout the pork chop. The result will be extremely delicate.
Let’s remember that Proper breaking and frying of the cutlets is also important. You cannot beat the meat for too long, because then you will damage its structure and unsightly-looking gaps will appear on it.
It’s better not to break the cutlets too thinbecause then they will not only become difficult to fry, but will also be less juicy. So it’s better for the pork chops to be thicker.
When it comes to frying, yes put the meat into hot oil, never into cold oil. Only then will the coating set immediately and create a crispy protective layer. The fat should cover the bottom of the pan, but should not cover the cutlets.
Pork chops are usually fried for 2-3 minutes on each side. The breading must be golden in color. Finally, it is a good idea to place the meat on a paper towel to drain excess fat.
After applying all these rules, pork chops will come out just like grandma’s. The meat will melt in your mouth.
