Mushroom omelet according to Jamie Oliver – simple, fragrant and without a single mistake

Omelet with mushrooms

Raw materials:

  • 4 fresh eggs
  • 150 g of mushrooms (preferably champignons, boletus or a mixture of wild mushrooms)
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • a pinch of salt and freshly ground pepper
  • a handful of chopped parsley or chives
  • a few shavings of parmesan

Procedure:

Heat a mixture of butter and olive oil in a pan. Add the chopped mushrooms and saute until they soften and start to turn golden. Salt and pepper them while roasting. Meanwhile, beat the eggs with a pinch of salt and chopped herbs in a bowl.

Once the mushrooms are ready, spread them all over the pan and pour the beaten eggs over them. Lower the heat and let the omelet slowly set. When the bottom is firm, you can either fold the omelette in half or leave it loosely spread, depending on how you like it. Finally, sprinkle it with some fresh parsley or parmesan.

Tip from Jamie

Jamie recommends adding a drop of lemon juice to the mushrooms to enhance their flavor and give the omelette a fresh note. If you have fresh thyme or rosemary on hand, feel free to use them instead of parsley.
