On November 11, I will serve my family a slightly different dinner than the classic meat dish. This time they will be it Borderland lovebirds – delicious, filling, filled with potato stuffing with groats, onion and garlic.
- 1 head of savoy cabbage,
- 350 g potatoes,
- 150 g buckwheat,
- 1 onion,
- 1 clove of garlic,
- 1 egg,
- 2 tablespoons of butter,
- 2 tablespoons of fresh thyme,
- 2 teaspoons of black pepper,
- 1 teaspoon of salt,
- 1 teaspoon of granulated onion.
Prepare the cabbage by removing the core with a sharp knife. Place the head in the pot with the stem down and pour water over it. Cook everything covered for about 5 minutes. Use tongs to carefully remove the leaves as they begin to detach from the head. Put them aside on paper towels.
Cook the buckwheat according to the instructions on the package, adding salt.
Peel the potatoes, cut into smaller cubes and cook in salted water until soft. Then use a potato masher to mash them into a smooth puree. Alternatively, you can also use leftovers from yesterday’s dinner.
Cut the onion into cubes and fry it in butter in a pan.
Put the potatoes, groats, onion, finely chopped thyme and other spices into the bowl. Mix everything carefully and thoroughly to obtain a uniform filling. Add the egg and mix everything again.
Cut the hard cores from the cabbage leaves. Place a solid spoonful of stuffing on each of them, being careful not to overfill the stuffed cabbage. Fold the sides of the leaf inwards and then roll the whole thing into a roll.
Place the prepared Kresy cabbage rolls in a greased ovenproof dish. Cover the whole thing with aluminum foil.
Put the dish in the oven preheated to 180 degrees Celsius and bake for about 45 minutes. Serve best with tomato or mushroom sauce.
