On November 1, after visiting cemeteries, many people meet their loved ones at a common table. Soon after, November 11 comes – National Independence Day, and the month ends with St. Andrew’s Day dancing. It’s time to serve something special to your guests – autumn, fragrant cakewhich will immediately create a warm atmosphere.

It will be perfect Pumpkin bake – moist, not too sweet, but wonderfully spicy. It is made with the addition of nuts, and its interior is covered with a cream of cream cheese, butter, sugar and a bit of vanilla. This a combination of delicate taste with autumn, seasonal products. The cake is really easy to prepare, and the effect will delight even those who usually don’t have a weakness for sweets. The cake for guests smells of cinnamon and fits perfectly into the November mood.

Ingredients:

Cake:

  • 220 g of wheat flour,
  • 200 ml rapeseed oil,
  • 200 g pumpkin puree,
  • 150 g of white sugar,
  • 100 g of brown sugar,
  • 70 g walnuts,
  • 3 eggs, size L or XL,
  • 1.5 teaspoons of gingerbread spice,
  • a teaspoon of baking soda,
  • a teaspoon of baking powder,
  • 1/2 teaspoon of salt.

Cream:

  • 200 g of cream cheese,
  • 150 g of powdered sugar,
  • 100 g of butter,
  • teaspoon of vanilla extract.

Additionally:

  • pieces of baked pumpkin for decoration.

How to do it:

  1. Prepare the dough. In a large bowl, mix flour, baking soda, baking powder, spices and salt. In another bowl, beat the eggs with both types of sugar. Add oil and pumpkin puree. Mix until combined. Pour dry ingredients into wet ingredients. Mix everything with a mixer at low speed until there are no lumps of flour. Add finely chopped nuts and mix everything with a spatula.
  2. Line a 22 cm diameter cake tin with baking paper. Pour the dough inside and Place in an oven preheated to 180 degrees Celsius for 45-55 minutes or to a dry stick. Remove and cool completely.
  3. Then cut the cake into two layers. Collect all the crumbs in a separate bowl and set aside for later.
  4. Prepare the cream. Beat the soft butter until light and fluffy. Add very cold cheese and vanilla. Mix briefly. Gradually add powdered sugar, mixing at medium speed until smooth and stiff.
  5. Assemble the dough. Place one layer of cake on a cake stand or plate. Spread them evenly with about 3/4 of the cream and cover with the second cake layer. Cover the top with the remaining cream and sprinkle with the previously saved cake crumbs.
  6. Decorate the cake for guests with pieces of baked pumpkin. Serve after cooling in the refrigerator for at least 3-4 hours.
