Millionaire’s Salad is a real feast for the eye and palate. Smoked chicken breast gives it an exquisite character, and crunchy cucumbers bring freshness that is so missing among traditional, heavy dishes. Colorful beans – red and white – add satiety and make the dish look attractive on the table. The whole thing is held together by a creamy sauce based on mayonnaise and yogurt, with a delicate accent of wine vinegar and mustard, which highlights the taste of meat and vegetables. This is a salad that not only tastes great, but also looks like a small work of art. It will perfectly introduce a bit of luxury to the Christmas menu.

Where did the name “Millionaire” come from? It’s not about the cost of the ingredients, but about the effect. A rich Christmas salad is an abundance of colors and flavors that gives the impression of luxury on the plate. The original versions even included beef cheeks, but today chicken or ham is most often chosen to maintain elegance and simplicity of preparation.

You can prepare Millionaire’s salad in literally fifteen minutes. It is best to make it half an hour before the holiday meal so that it has time to cool in the fridge. Then its flavors will mingle with each other and the cucumbers will not have time to wilt.

Ingredients (double portion – for 10-12 people):

  • 2 green cucumbers,
  • 400 g of smoked chicken breast,
  • 2 cans of red beans,
  • a can of white beans,
  • a bunch of dill.

For the sauce:

  • 4 tablespoons of mayonnaise,
  • 4 tablespoons of Greek yogurt,
  • 2 tablespoons of wine vinegar,
  • 2 teaspoons of mustard,
  • 2 teaspoons of sugar,
  • salt and pepper to taste.

Preparation method:

1. First prepare the sauce. Mix mayonnaise, yogurt, vinegar, mustard, sugar, salt and pepper. Set aside for a while to let the ingredients combine, while you prepare the salad.

2. Drain the beans, cut the chicken into cubes and chop the dill. Cut the cucumbers with the skin into sticks, add a little salt and leave on a separate plate for 10 minutes.. Then pour off the water and mix with all the ingredients in a large bowl.

3. Pour the dressing over the salad and mix gently. Put the whole thing in the fridge for half an hour.
