It’s a dessert that looks like little ones confectionery works of art, and at the same time it is surprisingly simple to do. Each sponge cake has a truffle cone made of velvety mascarpone and white chocolate, and the whole thing is covered with another portion of white chocolate. There is a fruit bauble at the top and sprinkled with pistachios and sugar balls truffle Christmas trees they look like Christmas decorations. In the original recipe, there are kumquats on top of Christmas trees, but you can also use blueberries, grapes, fresh cranberries, and even chocolate balls or candies.
To prepare this recipe, you will need:
- 10 round sponge cakes.
Ingredients for the mass:
- 250 g mascarpone,
- 200 g of white chocolate,
- 50 g of cream 36%,
- 25 g of butter.
To coat:
- 200 g of white chocolate.
For decoration:
- 10 kumquats, blueberries, grapes or cranberry balls,
- chopped pistachios,
- sugar balls.
Heat the cream and butter in a pot. Do not boil, just heat slightly until the butter melts. Add the broken white chocolate and stir until it melts completely. Set aside to cool until the mixture is lukewarm.
Place the mascarpone in a bowl and mix briefly until smooth. Pour in the cooled chocolate mass and mix until combined. The mass should become thick. Place in the fridge for about 20-30 minutes.
Take the cooled mass with a spoon and form cones. You can do it with your hands or with a pastry bag. Place each cone on the sponge cake.
If the mixture softens quickly, place the Christmas trees in the refrigerator for 10 minutes to help them hold their shape better.
Melt the white chocolate in a water bath or in the microwave (with short pulses). Cool slightly so that it is not hot.
Drizzle chocolate over Christmas trees or gently dip the cone until it is completely covered. Set aside on a wire rack or paper to allow excess chocolate to drain off.
Before the chocolate hardens completely, sprinkle the Christmas trees with pistachios and sugar balls. Place a kumquat at the top of each Christmas tree.
Set aside in the fridge for at least 30 minutes to allow the dessert to fully harden. Serve the truffle Christmas trees chilled.
