The Greeks know how to prepare iced coffee in such a way that it tastes almost like a summer vacation in a glass. It’s not just about strong coffee and ice cubes for them. Rosemary enhances the taste of coffee
Strong iced coffee is sometimes too bitter or heavy. Rosemary, however, can lighten it in a special way and make it fragrant. It works best in the form of a simple homemade syrup that you can prepare in a few minutes.
Baristas recommend boiling water, sugar and a few sprigs of rosemary to create a fragrant herbal syrup for iced coffees and mocha drinks.
Recipe for iced coffee with rosemary
Raw materials:
- 2 express
- a handful of ice
- 200 ml of milk
- 2 tablespoons of rosemary syrup
- a fresh sprig of rosemary
For the syrup:
- 100 ml of water
- 100 g of sugar
- 2 large sprigs of rosemary
Procedure:
First prepare the syrup. Pour water into a small saucepan, add sugar and rosemary. Boil briefly for about 5 minutes and then leave to cool. Rosemary gives the syrup a distinct aroma and a slightly herbal taste.
Pour ice into a tall glass, add chilled coffee, milk and rosemary syrup to taste. Finally, garnish with a fresh sprig of rosemary.
It tastes like coffee from a seaside cafe
The combination of coffee, ice and herbs is reminiscent of Mediterranean summer drinks that are popular mainly in Greece or Italy. In addition, the rosemary smells beautiful from the first drink.
Some cafes even combine rosemary with chocolate or tonic. However, it is recommended not to overdo it, as rosemary is very strongly aromatic.

“For example, orange peel and cardamom work great. Recently, however, people have also taken a liking to herbs, especially rosemary or lavender, which give iced coffee a fresh Mediterranean tone,” says cafe owner Jitka Lípová.
