Carrot cake is one of the desserts that can surprise not only their taste, but also how easy they are to prepare. Thanks to the natural sweetness of young carrots and the possibility of changing the recipe according to their own preferences, lovers of classic desserts and those who try to reduce sugar will come into their own. In the following lines we will guide you with two proven recipes. One for honest home cake with fragrant spices and the other for a lighter variant without added sugar, which retains full taste and supple the classic version.

Recipe for carrot cakes with mascarpone without sugar
To prepare this variant of sugar without sugar you will need three medium carrots, three eggs, 150 grams of spelled flour, 80 milliliters of coconut oil, 50 milliliters of date syrup, a teaspoon of cinnamon, a teaspoon of baking and a handful of chopped walnuts. These ingredients form the basis of a supple dough, which is naturally sweet thanks to carrots and date syrup, so there is no need to add any additional sugar.
Meanwhile, preheat the oven to 180 degrees. Grate the carrots finely and mix it with eggs, coconut oil and date syrup. Then add the flour mixed with the baking powder and cinnamon, eventually stir in the chopped nuts. Pour the dough into a smaller mold with baking paper and bake for about 35 to 40 minutes. After baking, let the cake cool completely and serve either alone or with a fine mascarpone or yogurt cream that you can taste with a little vanilla extract or lemon bark.
Recipe for carrot cake of young carrots
This variant of carrot cake uses spring carrots, which is sweeter and juicy than classic, and gives the dessert a fresh taste and beautifully supple structure. In a bowl, whisk 3 eggs with 1 cup of sugar and 1 cup of oil, then add 2 cups of coarse flour mixed with ½ baking powder and a pinch of salt. Finally, stir in 3 cups finely grated carrots and ½ cup of chopped walnuts. Pour the finished dough into a cake mold with grease and spilled with flour. Bake for about 40 minutes in the oven preheated to 200 ° C.
While the cake cools down, prepare the cream. From 375 ml of milk, 2 tablespoons of sand sugar and 1 bag of vanilla pudding powder, cook a thick pudding and allow it to cool. In the meantime, whisk 150 g of spread butter or curd with 2 tablespoons of icing sugar and gradually whisk the cooled pudding into it. Cut the cooled cake in half, spread the bottom with a little apricot marmalade and part of the cream, cover and spread the whole cake with the rest of the cream. Finally decorate with colored marzipan, for example in the form of small carrots.
