Recently, there has been a lot of buzz on social media about bottle-roasted chicken. In reality, however, this method of preparing poultry is nothing new.
In Polish kitchens. People just recently remembered it again. By the way, it’s very good, because this allows you to achieve great taste and aroma of meat.
This simple but brilliant method of preparation involves placing the poultry vertically on a vessel with liquid (e.g. beer/pure water). The goal is to create steam inside the chicken so that the meat remains moisturized, aromatic and juicy inside, while the skin remains crispy.
The most important thing is that the bottle is stable and safe, i.e. glass, without labels and glue, and that the liquid inside heats up and evaporates. If you want the chicken to have an additional intensely herbal aroma and flavor, marinate it first or add some garlic, onion, rosemary or other herbs.
In fact, to prepare this dish, apart from a bottle and a baking tray or heat-resistant dish, you do not need any special accessories. You just need to get the basic ingredients.
- – whole about 1.5 kg
- glass bottle – 1 piece
- baking tray/heat-resistant dish
- spices, e.g. garlic, marjoram, pepper, salt, paprika – as desired
- oil/butter – a little.
First, wash and dry the meat. Prepare the marinade by mixing oil with spices and rub it on the chicken – also under the skin – to make it taste great. You can fill the bottle, for example, with water with herbs to half its height.
Only then put the chicken on the bottle and place it vertically on a baking tray/in an ovenproof dish so that it remains stable and does not tip over during the baking process.
Once you take care of it, Put the chicken in the oven preheated to about 190 degrees Celsius for about 80-90 minutes. (depending on the size of the meat). If you want a crispy skin, pour the rendered fat over the chicken 2-3 times while baking.
