For many people, fried dumplings are a real delicacy, but they require appropriate skills to make them perfectly crispy and browned. As it turns out, what matters is not only how we fry the dumplings, but also what we use them with. Most people instinctively reach for oil, but it is not considered the best fat for frying.
Unfortunately, dumplings fried in a pan often tend to crack, stick to the pan or end up greasy and soft. Is there anything that can be done about this? Fortunately, yes, and in a trivial way. You just need to know what fat to use so that they come out crispy and golden like from a restaurant.
It works very well clarified butter, which is often considered the best choice. It combines a buttery flavor and a high smoke point, which makes it… it does not burn as quickly as, for example, ordinary butter. Thanks to this, dumplings fried in clarified butter come out evenly browned, slightly crispy and without a bitter aftertaste.
If not clarified butter, refined oils with a neutral taste will also work. This is an especially good option when a large number of dumplings are fried at the same time. Oils without intense flavor and high smoke point allows you to fry the dumplings well, although it will not give them such a rich aroma as clear butter.

Properly selected fat is one thing, but several other details that determine the final crispiness and taste are also important. One of them is the temperature of the dumplings themselves. They should be neither warm nor cold, because in this form they easily catch on the bottom and tear when tipped over.
So how to properly fry dumplings in a pan? Heat a frying pan over medium heat and melt the clear butter. When the fat has completely dissolved, simply place dry and cooled dumplings (not from the refrigerator) on it. for about 2-3 minutes on each side, until they become visibly golden and crispy.
Remove excess fat with a paper towel. Thanks to this, the dumplings will be perfectly crispy and non-greasy. Clear butter will add aroma to them, making them taste like from an expensive restaurant.
