Fluffy cake with a delicate taste

The symbol of the holiday table is certainly the cake. There are countless recipes for this dessert, and every family always has a favorite, which is often passed down from generation to generation. But why not try something new sometimes?!

It is important for the puff pastry that it is literally fluffy like a duvet, and above all it must not be a dry and suffocating pastry. And that’s exactly what won’t happen to you with the whipped cream cake, which actually replaces the use of fat. So you won’t need butter or any kind of oil. How exactly to prepare a whipped cream cake and how to proceed step by step?

Ingredients needed

Before starting work, prepare all the necessary ingredients. For this recipe you will need 1/4 l of whipping cream, 4 to 5 eggs, 500 g of semi-coarse flour, 1 baking powder, 150 g of caster sugar, a spoonful of raisins, a little fat and flour to brush and line the mold and 1 vanilla sugar for the final sprinkle

Festive cake with whipped cream

Start by cracking the eggs and separating the yolks and whites separately. Put the egg yolks in a bowl, sprinkle with sugar and wipe both ingredients properly or beat them into a fine foam. Then add the raisins, cream and flour that you have previously mixed with the baking powder. Next, whip stiff snow from the egg whites and carefully mix it into the dough.

Form preparation

At this moment, carefully grease the cake pan with the chosen fat, you can use butter or lard. Lubricate each fold thoroughly. We can sprinkle it not only with coarse flour, but also with breadcrumbs or coconut. Thanks to this, you will be able to turn out the cake better in the finale.

Baking phase

Pour the finished dough into the mold prepared in this way and bake in a preheated oven at 170 °C for about 30 to 45 minutes.

Check with a stick

You can tell if the cake is perfectly baked thanks to the stick test. Carefully insert it while it is still in the mold into the cake pan and then pull it out with a slow movement. Pulling out of the dough should remain completely clean and dry.

How to flip a cake

Take your time to turn the cake out of the mold! You could unnecessarily tear or otherwise deform it. It is better to let it cool for 5 to 10 minutes. The cake will have a chance to detach slightly from the walls of the mold and will slide out almost by itself. Then tap the mold with a plate and turn both over at the same time.

Final edit

Sprinkle the baked cake with vanilla sugar after turning it out, preferably on a festive tray on a foot. You can also cover it with chocolate or another topping according to your options and taste.

A final tip

This recipe is very variable, so you can improve the cake with other flavors as well. Raisins can be pre-soaked in, for example, rum or whiskey, or you can replace them with a handful of chopped nuts or candied fruit. There are certainly no limits to imagination!
