And that’s not enough. “It used to be beef, but now Czechs love poultry and pork more,” says the expert. And Czech cookbooks on that account bring a lot of great recipes on how to enjoy the “flákota” well. Unfortunately, the quality and freshness of the meat varies, which is also reflected in the gourmet enjoyment.

The marinade adjusts the flavor of the meat

So if you care about enjoying the meat, it doesn’t hurt to marinate it for a while. This sauce needs four ingredients to work well. An acid that breaks down protein fibers. Fat for better adhesion of the marinade to the meat. Salt and pepper to taste…

And that’s it! “There are a lot of marinades for chicken, pork and lamb, but I’ve had the best experience with the one made with Greek yogurt,” says the chef, adding that when making this marinade, he uses an essentially fatter version of Greek yogurt, which imparts a more delicious flavor to the meat.

Mediterranean variation

Greek marinade is ideal for grilled and baked meats. “You can use it on chicken, pork and lamb,” says the expert, adding her tried-and-true recipe: “Mix ½ cup Greek yogurt, ¼ cup fresh chopped dill, a little lemon juice, 1 teaspoon crushed fresh garlic, and ½ teaspoon salt and pepper. Mix all the ingredients to form a consistent mass. Then put meat in it for 90 to 120 minutes.”

For the grill and in the oven

“This kind of Mediterranean marinade is especially good for pork chops, which are juicy and have a more interesting flavor,” says the chef, adding that it’s best to flash the meat on the grill to “smoke” it, then reduce the heat and let it cook slowly.

Once the meat is grilled, let it rest for 5 minutes, covered with aluminum foil, so that the juices do not leak out. The marinade is of course also suitable for meat prepared in the oven. The expert recommends using a deeper roasting pan, lining it with aluminum foil and placing a grid inside on which you place the marinated meat. Then all you have to do is let the meat bake so that it acquires a golden crust.
