Boiled egg with grayish yolk? Find out why and how to avoid

Eggs are a versatile staple in many kitchens, but sometimes when baking them we may find a gray or greenish ring around the yolk. Although this color change in the yolk of a boiled egg may seem strange, it is not a cause for concern. Understand what causes this phenomenon and how to avoid it.

Why does the gray or green ring appear on the gemstone?

When an egg is cooked for a long time, at high temperatures, or remains in hot water after cooking is complete, a chemical reaction occurs between the sulfur present in the white and the iron in the yolk. This process forms iron sulfide, which is deposited on the surface of the gem, resulting in a gray-green color. This phenomenon is often accompanied by a slight sulfur odor.

Although this change is less visually pleasing and may slightly alter the texture of the yolk, it does not affect the food safety or nutritional value of the egg. It is, therefore, perfectly safe to consume eggs with this characteristic.

How to avoid the appearance of the ring?

To ensure that your hard-boiled eggs maintain a vibrant yolk color, it is essential to control the cooking time and temperature. Here are some general guidelines, given by:

  • Hard boiled egg: 8 to 10 minutes after the water starts to boil, ideal for recipes such as stuffed eggs.
  • This mollet: 4 to 5 minutes, perfect for dishes like eggs benedict.
  • Soft boiled egg: up to 3 minutes, to obtain a creamy texture.

Once the eggs are ready, transfer them to a bowl of cold water to stop the cooking process. This step helps avoid residual heat that can contribute to ring formation.

By following these simple tips, you will be able to obtain perfectly cooked eggs, without the unwanted gray color in the yolk. Plus, understanding this process can help you make the most of one of the most nutritious and versatile foods in your kitchen.
