Giraffe cake is an interesting idea a dessert consisting of puffs stuffed with coffee cream arranged in a tower, united in pride custard cream and flunked chocolate sauce. After cutting, guests will see a special pattern reminiscent of the color of a giraffe. The sweet looks spectacular, so it can easily replace a birthday cake. Although – at first glance – it seems quite a challenge, contrary to appearances – it is very easy to do. In the version for ambitious people, we suggest preparing the cream puffs yourself. In a faster and easier version, you can use the ready-made product.
Ingredients:
Coffee cream:
- 250 ml of cream 36%,
- 2 teaspoons of instant coffee,
- a pinch of salt,
- a teaspoon of vanilla extract,
- 50 g of powdered sugar.
Custard cream:
- 250 ml of milk,
- 125 g of butter,
- 300 g of powdered sugar,
- 500 g mascarpone,
- 2 teaspoons of vanilla extract,
- a tablespoon of potato starch,
- 2 tablespoons of wheat flour.
Chocolate sauce:
- 50 ml of cream 36%,
- a spoonful of butter,
- 250 g of milk chocolate,
- 1/2 teaspoon of vanilla extract.
How to do it:
Prepare the coffee cream. Start whipping the cream, adding the coffee granules, vanilla and salt. Gradually add powdered sugar and continue beating until stiff peaks form.
Prepare the custard cream. In a small pot, combine the milk, starch and flour. Mix and heat everything over medium heat. Once thickened, remove the pot from the heat and let the pudding cool to room temperature. In a large bowl, cream the butter with powdered sugar and vanilla until fluffy. Gradually add a spoonful of the now cool pudding. Whisk constantly until you obtain a creamy consistency. Then add mascarpone cheese and beat until combined.
Prepare the chocolate sauce. Combine cream and butter in a pot. Heat until the mixture begins to bubble slightly. Add crushed chocolate and vanilla. Stir until the chocolate is completely melted and the ingredients are combined. Remove the mixture from the heat and let cool.
Assemble the dough. Cut the puffs in half and fill them with coffee cream using a piping bag. Place one layer of previously prepared stuffed puffs in the bottom of the cake tin. Put a few tablespoons of custard cream on them. Then place another layer of puffs, carefully inserting them into the formed valleys. Continue this alternating arrangement, pressing the puffs lightly so that the custard cream fills all the free spaces.
After finishing the puffs, cover the top of the cake with the remaining custard cream. Pour the cool, slightly thickening chocolate sauce over the top. Place the giraffe cake in the fridge for at least 4 hours. Remove the rim from the cake tin just before serving the dessert.
