To prepare cheesecake with homemade cherry sauce, start by pouring warm water over the raisins to soak them. Meanwhile, blanch the lemon and grate the zest. Then we separate the egg whites from the yolks and beat the egg whites until stiff, adding a pinch of salt. Grind the yolks with powdered sugar.

Plus add cheese, mashed potatoes and flour. Mix the ingredients for a while to combine and add the stiffly beaten egg whites. Mix everything gently. We also add soaked raisins and lemon peel to the mass, in the amount according to our preferences. We also add vanilla essence.

Then grease the baking tin with butter and sprinkle with flour. Pour the cheese mass into it and bake in an oven preheated to 180 degrees Celsius for about 50-60 minutes.. After baking, open the oven and leave the cake in it for about 20 minutes. Then we put them on the counter to cool, and when they are cool, we put them in the fridge overnight. If you want to serve them with cherry sauce, place the cherries in a pot, add sugar, water, cloves and cinnamon bark. Cook all this covered for half an hour over low heat, and finally blend.
