A classic meter train requires a lot of work. In addition, confectionery mishaps may occur during its preparation, e.g. an under-risen sponge cake or a curdled cream. So it’s better to play it safe and prepare a quick no-bake cake for All Saints’ Day with biscuits and a simple, more stable filling of cream and mascarpone.
What ingredients do we need to make a no-bake meter cake? Here is the list:
- 500 ml of cream 30%;
- 250 g mascarpone;
- 200 g light biscuits;
- 200 g of dark biscuits;
- 4 tablespoons of powdered sugar.
First, beat the cream with powdered sugar. Then add mascarpone a spoonful and beat until smooth and stiff.
In the next step, start assembling the no-bake meter cake: place alternating light and dark biscuits in a cake tin, layering them with the previously prepared cream.
Finally, you can cover it with chocolate icing (you can make it by melting 1 chocolate bar with 1 tablespoon of butter). Wrap the prepared, quick, no-bake cake in foil and put it in the fridge for at least 1-2 hours. Cut the dessert in the same way as a classic meter cake, i.e. diagonally.
