Preserves taste wonderful in the middle of winter. Most often, we eat them on their own or with sandwiches, but nothing stops us from making salads with them for dinner. This time we present a recipe for pickled cucumber salad.
Pickled cucumber salad is usually made with onion, pepper and olive oil. It’s time to add additional ingredients that will make it even tastier. The job is done by… canned peppers – many people have enough of it in their pantry. It tastes great with pickled cucumbers.
What ingredients do we need to make pickled cucumber salad? Here is the list:
- 500 g pickled cucumbers;
- 250 g canned peppers;
- 1 onion;
- 2 tablespoons of olive oil;
- 1 tablespoon of French mustard;
- salt, pepper and sugar to taste;
- optional: parsley for decoration.
First, cut the pickled cucumbers into thin slices or grate them. Place the prepared vegetables in a bowl.
Then cut the canned pepper into cubes or thin strips. We add it to cucumbers.
In the next step, cut the onion into cubes or into strips, put it in a separate bowl and add a little sugar to it to soften it a bit. Then add olive oil and mustard and mix everything.
Place the onion with olive oil and mustard in a bowl with pickled cucumbers and pickled peppers. Season everything as desired and decorate with chopped parsley.
Pickled cucumber salad prepared in this way will be perfect for any dinner. For example, it can be served with pork chops, roasted and stewed meats, and with potato dishes, such as potato casserole or kartacze.
