When meat becomes more expensive, this food of our grandmothers returns to the table

They smell, crunch and taste like you’re sitting at your grandmother’s table again. And one serving doesn’t even cost as much as a fast food burger. Try it and see for yourself.

It might sound a bit boring. Plates. And on top of that. But you couldn’t be further from the truth. Not only our grandmothers loved pancakes in a million ways. They knew very well that it was food that would feed a family of ten and prepare it for a few crowns. In addition, you can vary the basic recipe very well. Maybe depending on what you have on hand at home right now.

Recipe for cabbage pancakes

They go well with any dip, but feel free to pack them on their own for a snack.

  • ¼ head of fresh cabbage
  • 100 g plain flour
  • 80 g of bacon
  • 1 onion
  • 2 eggs
  • 1 teaspoon of ground cumin
  • salt and pepper

Round the cabbage, salt it and then mash it thoroughly with your hands so that it softens and is easier to work with.

Leave the diced bacon to drain the fat in the pan. Then add diced onion to it and fry it slowly with bacon until golden.

Beat eggs with pepper and cumin in a bowl. Add to the cabbage, add flour and onion mixture and mix everything carefully. Then form pancakes from the mixture.

You can fry the finished pancakes in an already greased pan with bacon, or bake them in the oven on baking paper. At 180°C, it will take about 20 minutes depending on the size of the patties.

In the end, they should turn a nice golden color on the surface and crunch lightly when bitten.

Try a change next time

Apart from cabbage, you can change almost everything in pancakes. Try not only classic plain flour, but also wholemeal or spelled flour, even rice or buckwheat flour. In the same way, you can add grated carrots to the cabbage, or even replace part of it with sauerkraut.

with chopped breadcrumbs, or omit it completely, just like the onion. And the spices? That would take up a whole page in a cookbook!
