After all, I think each of us likes to eat on our free time with tasty bread. Unfortunately, it often becomes stale after just a few hours and loses its crunchiness and unique aroma. In fact, the freshness of bread depends on many factors, such as the quality of ingredients, baking method and storage conditions. It is the latter that have a significant impact on how long the rolls or loaves we buy will retain their taste. There are two basic rules to follow when storing bread. Firstly, protect the bread so that it does not dry out, and secondly, protect it from excessive moisture. Unfortunately, many Poles are under the mistaken belief that the best way to extend its freshness is to place it in the refrigerator. Why?
Storing bread in the refrigerator accelerates its molding
Contrary to popular belief, it can do more harm than good in the refrigerator. The main reason why it is not recommended to store bread in the refrigerator is the staling process. At temperatures between 0°C and 10°C, the typical refrigerator temperature, starch in bread crystallizes much faster than at room temperature. This causes the bread to become dry, hard and crumbly, losing its freshness and flavor. Low temperature can also affect the taste and smell of bread, as well as its elasticity. Additionally, the humidity in the refrigerator accelerates the molding process of bread.
How to store bread to extend its freshness?
If you want bread or rolls, you should follow a few rules for storing them. It is worth paying attention to what our bread box is made of. It should ensure air circulation, protecting the bread from drying out and molding. Ceramic or wooden haversacks are the best. Storing bread in a paper bag is a good way to keep it fresh. However, avoid plastic bags, which encourage mold growth. Store the loaf cut side down to prevent it from drying out. If you know you won’t eat the bread within a few days, freeze it. Cut the bread into slices or smaller portions, wrap in foil or place in a ziplock bag and freeze. Defrost at room temperature or in the oven.
