Salads are a summer classic not only thanks to the rich offer of seasonal vegetables and fruits, but also thanks to their simple and quick preparation. Forget the classic boring salads that everyone knows! Open your horizons and start experimenting. You will conjure up a delicious healthy delicacy on your plate, in which the taste of citrus fruits, vegetables and even pistachios are mixed. In this case, healthy fats are represented by avocado, and you can also prepare the dressing in advance and store it in a bottle in the refrigerator for further use. You can eat this salad on its own, but of course also as a side dish to meat or fish. Here is the recipe for the most colorful salad of the season.

For this healthy citrus – vegetable – avocado salad you will need the following ingredients:

  • 2 red orangesalso called blood oranges or grapefruits, peeled and cut into crescents, represent a beautiful red color
  • 1 avocado, diced
  • 1 cup of cooked beets diced, beetroot will not only give a beautiful purple color but also a lot of antioxidants
  • 1⁄4 red onioncut into thin slices
  • 1⁄4 cup pistachios
  • Dressing:
  • 1⁄4 cup extra virgin olive oil
  • 2 PL apple cider vinegar
  • 1 PL maple syrup (or agave)
  • 1 ART Dijon mustard
  • 1⁄4 tsp sea ​​or Himalayan salt
  • 1⁄8 tsp spices

Peel the citrus and cut them into crescents. Dice the avocado and beetroot. Cut the red onion into thin slices. Prepare the dressing – put the ingredients in a closed container and shake it well to emulsify. Place the citrus, avocado, beets and red onion on a serving plate or bowl. Drizzle with dressing, toss and sprinkle with pistachios. Bon appetit!
