Quinoa and kale pancakes This is an incredibly simple and delicious dish, aromatic thanks to its preparation from quinoa cooked in broth. They melt in your mouth, making them perfect for dinner for the whole family. If you want, use vegetable broth and vegan eggs to prepare a dish completely without meat ingredients.
To prepare this recipe, you will need:
- 200 g of quinoa,
- 400 ml of vegetable broth,
- 4 stalks of kale,
- 40 g panko breadcrumbs,
- 4 eggs,
- 4 spring onions,
- 50 g of parmesan,
- 4 cloves of garlic,
- 1 teaspoon of salt,
- ½ teaspoon of black pepper.

You can serve it tasty with ready-made pancakes sauce, for example tzatziki. Just grate a green cucumber, squeeze out the water, add Greek yogurt, salt, pepper, a clove of garlic and a bit of lime.
Steam the kale briefly and chop finely.
Cook the quinoa in the broth according to the instructions on the package. Once cooked, remove it from the heat and add the kale without stirring. Cover the whole thing for 8-10 minutes, then mix and set aside.
In a large bowl, mix the quinoa and kale mixture, breadcrumbs, previously beaten eggs, finely chopped onion, cheese, garlic, salt and pepper.
Heat a tablespoon of olive oil in a pan. Form flat cakes from the mixture and place them in batches on the heated fat, being careful not to overfill the pan.
Fry the quinoa and kale pancakes for 5 minutes on one side, then turn them over and fry for another 7-8 minutes, until nicely golden.
When ready, place them on paper towels to absorb excess fat.
Serve the pancakes with your favorite additions – avocado, coriander, parmesan.
Store leftovers in the refrigerator in an airtight container and use within 2 days. Heat them in a pan.
