Pate with pumpkin seeds you can make it without adding any meat. The basics here are of course pumpkin seeds, a brilliant source of zinc and healthy fats. You will also need to be extremely healthy milletwhich is easily digestible, has a lot of fiber, lots of B vitamins, and minerals such as iron, silicon, and magnesium. This pâté is perfect for people who care about their health or want to lose some extra kilos.
To prepare this recipe, you will need:
- 400 g pumpkin seeds,
- 120 g millet,
- 4 onions,
- small carrot,
- 600 ml vegetable broth,
- 120 g of potato flour,
- 30 ml of olive oil,
- a handful of shelled sunflower seeds,
- salt and pepper to taste,
- rapeseed oil for frying.
You can serve the finished pâté as an appetizer or eat it with your favorite bread.
Cook the millet according to the instructions on the package. Cook the carrots separately. Meanwhile, grind 350 g of pumpkin seeds using a chopper or blender.
Chop the onion finely. Fry it in hot oil. Combine it with millet and mix finely, preferably with a blender.
Pour the vegetable broth into a bowl. Put the pumpkin seeds, onion and millet into it. Add the carrot, divided into smaller pieces. Add olive oil, salt and pepper. Mix until you obtain a smooth mass. Add potato flour, the rest of the pumpkin seeds and shelled sunflower seeds and mix again until smooth.
Pour the mixture into a loaf pan or aluminum pâté molds. Bake at 180 degrees Celsius for an hour uncovered.
