There are some baked goods that I can’t resist – pie with cheese this is definitely one of them. I especially liked this recipe, with apples and pecans, which give the whole thing a unique character. If you prepare this dessert once, you will definitely come back to it often.
Ingredients for the cake:
- 20 g of fresh yeast,
- 1 tablespoon of sugar,
- 200 ml of milk,
- 400 g of flour,
- 1 egg,
- a pinch of salt,
- 25 g of liquid butter.
Ingredients for the crumble:
- 100 g of wheat flour,
- 75 g of cold butter,
- 50 g sugar,
- 75 g pecans.
Ingredients for the mass:
- 250 g of ground cottage cheese,
- 50 g of liquid butter,
- 1 egg + 1 yolk,
- 50 g sugar,
- 1 teaspoon of vanilla extract,
- 2 apples,
- 1 teaspoon of cinnamon.
Heat half the amount of milk to 35°C. Crumble the yeast into it and add sugar. Stir until the yeast dissolves. Cover the vessel with the leaven with a cloth and set aside in a warm place for fifteen minutes.
The volume of the grout should increase significantly.
Sift the flour into the mixer bowl. Add the egg, risen leaven and a pinch of salt. Blend with the hook attachment. While mixing, gradually pour the cooled butter into the resulting dough.
When the dough becomes smooth and elastic, place it in a lightly greased bowl and set aside in a warm place for about an hour – until it at least doubles in volume.
Combine the crumble ingredients in a bowl: flour, butter (cut into cubes) and sugar. Mix until a loose, lumpy dough is formed. Put in the fridge. Chop the nuts quite finely.
Mix cottage cheese with butter. Beat the egg and yolk with sugar. Combine with cottage cheese and vanilla extract.
Peel and core the apples. Cut the pulp into pieces. Sprinkle with cinnamon.
Transfer the risen dough to a 26 cm diameter cake tin lined with baking paper. Pour the cheese mixture onto the dough and smooth it out. Spread the apple pieces evenly over the mixture. Sprinkle everything with crumble and nuts.
Put the cake in the oven preheated to 165°C. Bake for about 50 minutes.
