Many of us start the day with sandwiches or classic scrambled eggs. However, it is worth knowing a certain recipe for breakfast, which is somewhat forgotten and in the past was often present on our grandmothers’ tables. This is a filling and warming dish, so it’s perfect for cool autumn mornings.
If you want to prepare something other than ordinary scrambled eggs for breakfast, it is worth reaching for a traditional dish from Greater Poland, which is becoming a bit forgotten. We are talking about klepok, another type of scrambled eggs that also contains milk, flour and aromatic sausage. This was an ancient way of preparing a quick and filling breakfast.
Of course, depending on what was in the pantry at the time klepoka could include the above-mentioned sausage or bacon, onion or chives. Today, few people remember this traditional Greater Poland breakfast, but it is worth bringing it back to the table, especially on colder days.
However, if we want to try klepok, but in a vegetarian version, then we can replace the sausage with tofu. Some people also decide to add mushrooms or tomatoes to the dish.

Preparing klepok is very easy. It only takes a moment to prepare a breakfast that will provide us with energy for the first half of the day. If you want to make the classic version of this dish, prepare the following ingredients
- 4 eggs,
- 0.5 cup of milk,
- 2 tablespoons of butter,
- 2 tablespoons of flour,
- 2 Silesian or peasant sausages,
- a bunch of chives,
- sun,
- pepper.
We start preparing from cut the sausage into slices and fry it in a pan with butter. Fry the sausage until it becomes crispy and golden. Thanks to this, our breakfast will have a more intense taste.
Then mix the milk and flour thoroughly in a bowl so that there are no lumps. Add the eggs and use a whisk to combine everything. However, be careful not to beat the mass too hard so that it becomes fluffy and does not form an omelette-like mass.
After beating, pour it into the pan with the sausage. Mix everything carefully until the eggs have a creamy consistency. Finally, season the klepok with salt and pepper and sprinkle it with finely chopped chives. Breakfast can be served with fresh bread.
