This is the best blue cabbage for roulades and Silesian dumplings. It tastes like grandma's

Modro cabbage is a gem of Silesian cuisineloved by all generations of Poles. This year, it cannot be missing on your Christmas table. It is an interesting alternative to vegetable salad or carrot salad, which we most often eat during Christmas. It will quickly disappear from the table because it is the perfect complement to dinner.

Blue cabbage or simply blue cabbage is a salad made of shredded, boiled red cabbage with the addition of apple and other additives. It is popular in Silesia and Greater Poland. It has many advantages: it is filling (great for digestion), universal in taste and has a delicate consistency.

Blue cabbage in the kitchen goes well with traditional roulade, roasted duck or goose and Silesian dumplings, as well as pork chop with potatoes. If you want, you can also eat it as an addition to chicken or as a base for vegetarian dishes.

You can make blue cabbage in different versions, depending on what additions you prefer. But don’t complicate your life, because This vegetable salad tastes best in a slightly sour version with apple and other additions (you can also add your own, e.g. raisins or dried cranberries).

Recipe for blue cabbage – ingredients for a serving for 6 people:

  • red cabbage – 1/2 head
  • apples – 2 pieces
  • lemon – 1 piece
  • onion – 1 piece
  • olive oil – 2 tbsp
  • spices: pepper, sugar, salt

Preparing red cabbage salad is not complicated. It will take you about 30 minutesand it doesn’t take much time compared to, for example, a traditional vegetable salad. First, wash the vegetable and remove the upper leaves.

Then cut them into two halves. Leave one part for later and the other chop finely, put in a bowl and season with salt (1 teaspoon). Boil water, add 1 tablespoon of salt and 1 tablespoon of sugar. When the water starts to boil, add the chopped cabbage for 7-12 minutesdepending on the preferred degree of crispiness of the red cabbage.

Strain and cool the contents of the pot and transfer to a bowl. Pour generously with lemon juice. Mix thoroughly, add diced onion, peeled and grated apples, and finally mix it all with the cabbage. Add some oil and season to taste (pepper, salt).
