You haven't eaten such good poppy seed cake before. Thanks to this ingredient, it remains moist for a long time

Makowiec is a traditional Christmas cake. It is intended to symbolize prosperity, fertility and prosperity in the coming year. That’s why baking with poppy seeds appears among the 12 Christmas Eve dishes – it was once believed that small seeds would bring happiness to the family. In a classic cake, the poppy seed cake is quite dense and intense, but poppy seed cake with apples is a lighter, more moist proposition. The addition of juicy, grated apples makes the poppy seed mass soft and remains moist for up to several days.. This cake stays fresh longer, has a nicer consistency and often tastes better to those who prefer more delicate baked goods on a daily basis. Perfect if you want to introduce a subtle change to the Christmas table, without giving up tradition.

Ingredients:

Cake:

  • 400 g ground poppy seeds,
  • 500 ml of milk,
  • 200 g of butter,
  • 200 g of powdered sugar,
  • 170 g of semolina,
  • 600 g apples,
  • 8 eggs,
  • 2 teaspoons of baking powder,
  • a pinch of salt,
  • 100 g of dried fruit (walnuts, hazelnuts, cranberries, apricots, raisins),
  • a few spice cakes.

Chocolate icing:

  • 100 g of milk or dark chocolate,
  • a spoonful of butter,
  • spoon of milk.

How to do it:

1. Boil the milk in a pot. Add the poppy seeds and mix. Set aside for about 45 minutes until the poppy seeds absorb the milk. If it is too moist, press it out on a sieve. If all the liquid is absorbed, leave it as is.

2. Peel the apples and grate them on a coarse grater. If they release a lot of juice, squeeze it out lightly. Chop the dried fruit into smaller pieces.

3. Separate the whites from the yolks. Beat until stiff with a pinch of salt.

4. In another bowl, cream the soft butter with powdered sugar until light and fluffy. Add one yolk at a time, mixing constantly.

5. Gradually add poppy seeds and grated apples to the butter mixture. Add the semolina, mixing at low speed. Add dried fruits and baking powder. Finally, add the beaten egg whites and gently fold them in with a spatula.

6. Pour the poppy seed mixture onto a 27 cm diameter baking tray lined with baking paper. Bake for 60 minutes at 180°C or until the so-called dry stick.

7. Put the chocolate into the pot, add milk and butter. Heat over low heat, stirring until the chocolate melts completely. Pour the icing onto the cooled cake and spread it evenly. Place the spice cookies as decorations.

8. After baking, cool the moist poppy seed cake with apples in the form.
