Lemon soup with salmon is incredibly easy to make. It combines simplicity of flavors, freshness and unique aroma. It will be ready in just 35 minutesand thanks to the fish and potatoes, the dish is also extremely nutritious. The dish has its roots in Finlandwhere it is known as Lohikeitto. The creaminess of the soup, the delicacy of the additions and the refreshing taste will remain in your memory for a long time.

Ingredients:
- 450 g salmon fillets,
- 450 g potatoes,
- 1.5 l of vegetable broth,
- 250 ml whipping cream 36%,
- 2 seasons,
- 2 carrots,
- 2 tablespoons of butter,
- a handful of fresh dill,
- juice of 1/2 lemon,
- bay leaf,
- a pinch of ground allspice,
- 1/2 teaspoon of salt,
- 1/2 teaspoon of black pepper.

How to do it:
1. Cut the leek and carrot into slices and the potatoes into quarters. Cut the salmon into bite-sized pieces.
2. Melt the butter in a large pot over medium heat. Add the leek and carrot, then season with salt. Cook until soft for about 5 minutes.
3. Add the potatoes to the pot. Pour in the broth, then add the bay leaf, allspice, salt and pepper. Bring everything to a boil, then reduce the heat and simmer the soup for 15-20 minutes.
4. Gently stir in the salmon pieces and continue cooking for another 5 minutes until the fish is completely cooked.
5. Pour in the cream and add dill. Do not bring to a boil.
6. Remove the bay leaf and season as needed. Finally, pour in the lemon juice and mix gently.
7. Serve the lemon soup with salmon warm, garnished with additional dill. Store leftovers in the fridge and use within 2-3 days.
