Crunch with coffee or decorate a cake with them. These sweets are hard to resist

Coffee meringues are a great snack for afternoon coffee or tea. They are not too sweet, with a classic and characteristic hint of bitterness. The whole thing is very simple to prepare, although they require a long baking time. They are perfectly soft inside and crispy on the outside. The secret is to cool and evaporate the liquid long enough. Although this is certainly not a suitable baking for people on a diet, it is worth allowing yourself a moment of pleasure from time to time.

Ingredients:

  • 3 egg whites, size L or XL,
  • 150 g sugar,
  • 1/2 teaspoon of vanilla extract,
  • 1.5 tablespoons of instant coffee,
  • spoon of roasted coffee beans.

How to do it:

1. Beat the egg whites at high speed with a mixer until thick and fluffy. Gradually add sugar and beat until stiff and shiny. Finally, mix in the vanilla and instant coffee.

2. Transfer the beaten egg whites to a pastry bag and squeeze the stars onto an oven tray lined with baking paper, greased with butter and lightly sprinkled with flour. The mounds should have a diameter of approximately 4-5 cm and must be spaced at least 2.5 cm apart.

3. Grate the coffee beans on a fine grater and sprinkle them on top of the meringues.

4. Put the coffee meringues in an oven preheated to 100 degrees Celsius until they are light brown and give slightly under pressure. Bake them for approx. 80-90 minutes. Turn off the oven and leave the meringues in the closed oven for an hour.

5. Remove the meringues by inserting a spatula under them. Serve cold as a stand-alone dessert or as a decoration for larger baked goods.
