Summer brings not only strawberries and raspberries, but also apricots. In the tropical heat, when no one wants to turn on the oven, a no-bake apricot cake with mascarpone and cottage cheese, which you can prepare in a few minutes, comes in handy. Take a look.

Spring has already slowly rang, summer is here, and that means only one thing – the long-awaited period of warmth, well-being, vacations, trips and fresh summer fruits is here. Summer is the season of strawberries, raspberries, melons, blueberries, peaches and also . And many people wonder what could make them a good thing. But summer is not only a time of peace and quiet, but also of really solid tropical heat. And if nobody really wants to do anything at 33 degrees Celsius, it’s baking and any contact with the oven. Luckily, this easy apricot dessert is no-bake and ready in minutes.

No Bake Apricot Pie

Apricots contain a relatively large amount of water, which makes them beautifully refreshing during the hot summer. Since they typically have a sweet and sour taste, they go well with, for example, cottage cheese, cream cheese, yogurt or , which are precisely the ingredients that are very often used in the preparation of unbaked desserts. In addition, apricots do not need to be heat-treated, which means that you can enjoy them in their true and unmodified form.

Ingredients:

500 grams of fresh apricots

250 grams of mascarpone

250 grams of soft cottage cheese

200 grams of butter biscuits

80 grams of melted butter

2 to 3 tablespoons of powdered sugar

Procedure:

First, take the biscuits and crush them really finely. Then, using a spoon or fork, mix them with the melted butter. Press the resulting mixture into the bottom of a cake pan or a smaller baking pan, depending on what you use. Then put the mold or baking pan in the fridge for a quarter of an hour. While you wait for the mixture to harden, make the cream. You make it by mixing mascarpone, sugar and cottage cheese. Place all three ingredients in a bowl and whisk until smooth.

Then spread the resulting cream evenly on the prepared, cooled body. Take the apricots, wash and clean them thoroughly. Slice them and arrange them on top of the cream. And you’re basically done. Now leave the cake to cool in the fridge for at least an hourand everything is done. You can serve, or decorate with, for example, a mint leaf or a little powdered sugar.
