Do you also love when you pour something into a mold and it does its magic in the oven? That’s exactly what a smart cake is. A simple dessert that turns into a dessert with several layers during baking. At the same time, the preparation takes only a few minutes. What more could you wish for?
At first glance, this dessert may seem very ordinary, but during baking, three layers are formed from a simple dough. Sponge bottom, creamy center and fluffy top. The secret of success lies in a careful procedure, the right ratio of ingredients and a low baking temperature.

To prepare it, you will need basic ingredients that can be found in almost every kitchen: six eggs, 250 grams of sugar, 125 grams of plain flour, 125 grams of butter, a liter of milk and a little vanilla flavoring.
Start by separating the yolks from the whites. Beat the egg yolks with the sugar into a light foam, which will add lightness to the cake. Add the melted butter and gradually mix in the flour and milk to make a smooth dough. Finally, whip the egg whites until stiff and carefully fold them into the dough. The resulting mixture will be liquid, and this is what creates the layers.
Pour the batter into a baking tray lined with baking paper or greased with butter. Bake at 150 degrees Celsius for about an hour until the surface is golden and firm to the touch. After removing from the oven, allow the cake to cool completely in the pan to allow the layers to set well.
When you slice the cake, it reveals clearly separated layers that look like you’ve added a filling to the dough. The bottom part is soft and creamy, the middle layer resembles a vanilla pudding and the top part has a light sponge texture. You can vary the cake by adding lemon zest for a refreshing taste or a light dusting of cocoa for a chocolate touch.
A smart cake is best after resting in the cold for a few hours, when the layers settle down even better. Before serving, you can decorate it with powdered sugar or add fresh fruit, which perfectly emphasizes its delicate taste.
