Many people give up preparing gingerbread for the holidays due to the need to prepare the dough in advance, which must mature for a sufficiently long time. Fortunately, there is a simple and delicious solution that tastes just like old Polish gingerbread.
This is the so-called “last minute” gingerbread, which can be prepared even just before Christmas. It is simple and quick to prepare, and yet it turns out soft and ultra-moist, which makes it suitable for absolutely everyone. Once prepared, it will certainly be included in the traditional holiday menu for your entire family.
Preparing the dough is very quick and requires only combining the ingredients with a spoon. The secret addition is plum jam, which, interestingly, can be replaced with a spoon of mayonnaise. Thanks to this, the baked goods will be fluffy and moist, just as gingerbread should be.

The ingredients needed to prepare the gingerbread dough should be at room temperature. Connecting them is extremely simple and takes about 10 minutes. The list of products needed is as follows:
- 3 cups of wheat flour
- ½ cup of sugar
- 1 cup
- 2/3 stick of butter
- 3 eggs
- 4 tablespoons of buckwheat honey
- 4 tablespoons of plum jam (you can replace it with a tablespoon of mayonnaise)
- 2 tablespoons of cocoa
- 1 gingerbread spice
- 1 teaspoon of baking soda

Start preparing last minute gingerbread with dry ingredients. To do this, sift the flour into a bowl, add gingerbread spice, cocoa, sugar, baking soda and a pinch of salt. Mix everything together with a spoon.
Then move on to the wet ingredients. So melt the butter and leave it to cool. Meanwhile, crack the eggs into another bowl and add milk, honey and jam. Don’t forget to add the cooled butter as well. Meanwhile, prepare the icing. Melt the chocolate in a water bath. Add the cream to it and mix until a uniform mass is obtained.
