He doesn’t have to wear a typical plaid shirt, a carefully waxed mustache or a mallet in his hand. Much more you will appreciate a big smile, a nice shop and an attitude that makes you want to come back every time. “Before, butchers didn’t get along with people very much, but today don’t be afraid to ask anything. A good butcher will always be happy to answer you,” says František Kšána in the podcast.

There are many of them, and now you have to choose the one who will be good among them. Who will be able to advise and at the same time you will not feel that you are holding him back from the next business. At the same time, according to an expert, you can easily recognize the right one. “Dad taught me that if you pass on your own experience to customers, it will attract others. You can also be happy that you are spreading quality. That’s why a good butcher must constantly learn and keep an open mind,” says Prague butcher František Kšána Jr., whose father of the same name owned the legendary Břevnov butcher shop.
Follow your nose
If you are really just looking and groping, ask first. And when you get some recommendations for a good butcher in the area, try to use your senses. “The basis is the smell. Meat and sausages are food and they must smell to you,” explains František Kšána. “So if you come to a store where it smells good, it’s not dirty, and you’ve even gotten a referral, then you’re in the right place.”
He must be able to give advice
At the same time, according to him, it is important to try, not to be afraid to keep looking after the first failure. For example, go to a new butcher that has just opened, or look around for a list of farms that offer their own meat from the yard. The person you buy it from should definitely be nice to you. After all, you are leaving him considerable sums.
If he is an expert who does not cheat and likes to do his job, then he can be recognized by one more thing. He has no problem giving you advice and talking to you about, say, the entire meat counter, even if he knows you’ll end up taking away only one or two packages. In addition, he will give you a little estimate and help everyone with the selection – . “A good salesperson will offer you something that will work the first time,” says the expert. “He must give you excellent advice, help you choose, and maybe even tell you what you can make from a particular piece of meat. He will actually open up a new dimension of thinking for you and you will find yourself well thanks to him.”
