This German dish is a soup that is worth making when you are bored with regular broth and want to try new flavors. It is not only delicious, but also very filling, so it is perfect for various types of celebrations. We show you how to make it so that it turns out aromatic and tasty.
Hochzeitssuppe, also known as wedding soup, is a traditional German dish served mainly at weddings and other ceremonial meetings. This is a delicate and aromatic soup that can be a great alternative to classic broth.
This is because these soups are usually served with various types of additions that enrich its taste and make the dish truly unique. They are included with the basic beef stock such as asparagus, white sausage or peas. The version we propose includes egg dumplings and meatballs. Thanks to this, the soup will be not only tasty, but also filling.
To prepare this tasty dish, we will need a lot of ingredients. However, there is no need to be discouraged, because most of them are easily available, and the dish we will create is worth it because it tastes amazing. To prepare the broth and the base of the dish, we will need:
- 1.5 l of clear beef broth,
- 1 carrot,
- 1 parsley (root),
- 100 g of taste,
- 100 g of cooked meat from broth,
- 0.5 leek (white part),
- 100 g of fine thread-type pasta,
- salt and pepper
- a pinch of nutmeg,
- parsley.
However, to prepare egg dumplings, we will need, of course 2 eggs, 100 ml of milk, a pinch of salt, a pinch of nutmeg and butter for greasing the form. To prepare meatballs, you need 150 g of minced poultry, 1 tablespoon of breadcrumbs, 1 tablespoon of milk, 1 small egg, salt and pepper.
We start preparing the soup by making our base. To do this, peel and cut the vegetables into thin strips. We throw them into the hot broth and cook for about 15 minutesuntil the vegetables are soft. Meanwhile, in a separate pot, cook the pasta until al dente. Strain it and set it aside.
Then we start preparing egg dumplings. To do this, mix eggs, milk, nutmeg and salt thoroughly. Pour the mixture into a small greased baking tin and steam or cook in a water bath for about 20 minutes until the mixture sets. After cooling down, cut it into small cubes.

The next step is to make the meatballs. In a bowl, combine the minced meat, milk, egg, breadcrumbs, salt and pepper. Mix thoroughly and form small balls of the mass, which will be about 2 cm in diameter. Put them into the hot broth and cook for about 10 minutes until they float to the top. Remove them with a slotted spoon and set aside.
Finally, we combine all our elements into one delicious soup. Add cooked pasta, pieces of cooked meat, egg noodles and cooked meatballs to the broth and heat everything together for a few minutes. Season everything and pour the soup into bowls. Serve it sprinkled with parsley.
