Sweet Christmas Eve herrings. Two simple ingredients completely change the taste

Herrings for Christmas Eve don’t have to be salty and vinegary – they also taste great sweet, in this case with cranberries and peaches. This combination may surprise traditionalists, but it quickly convinces with the delicate sweetness and juiciness of peaches and the slight sourness of cranberries. This version of herrings breaks down the heavier, spicy flavors of Christmas dishes well and adds more freshness to the menu. It will appeal to everyone who does not like the strong taste of fish – fruit softens its aroma and adds a dessert note to the dish. This is a great way to introduce something new to the menu and at the same time maintain the Christmas Eve tradition.

Ingredients:

  • 5 herring sheets (from brine),
  • 60 ml rapeseed oil,
  • 60 ml apple vinegar,
  • 2 peach halves (from syrup),
  • onion,
  • 2 tablespoons of dried cranberries,
  • a tablespoon of finely chopped dill,
  • 2 bay leaves,
  • 4 grains of allspice,
  • freshly ground black pepper.

How to do it:

1. Soak the herring fillets in cold water. Soak until they reach the desired flavor. Replace the water with fresh water every half hour. Every time you change the water, check whether the herring is salty enough. Soak them in milk one last time, this will make them more delicate. Dry the finished herring with a paper towel and cut it into small pieces.

2. Pour hot water over the cranberries and leave to soak for an hour.

3. Peel the onion and cut into cubes. Also cut the peach halves into small cubes.

4. Mix oil and vinegar. Combine with pepper and dill.

5. Arrange the herrings in jars alternating with the drained cranberries and peaches. Add spices to the jars – bay leaves and allspice. Cover with vinegar and oil marinade.

6. Put the jars with herrings in the fridge. They will be ready to eat after 2-3 days.
