We eat sandwiches for breakfast when we are getting ready for work and every minute counts. We can spend a little more time for dinner and prepare something much better. This time we present a recipe for boiled potato pancakes. They taste, filling and are easy to make.
The main ingredient for these pancakes are potatoes, from which classic zrazy is made. These are floury type C or BC potatoes. They must be chilled because then we will use less flour and the dough will not be so heavy.
It is best to cool boiled potatoes in the refrigerator, although in winter there is nothing stopping you from taking them out to the balcony. They will cool down there in just 20 minutes.
Boiled potato pancakes We make it with egg stuffing, the main ingredient of which are hard-boiled eggs. Most of us have other products for this dish in our fridge. However, if not, we can buy them literally in any store.
Ingredients for the pancakes:
- 1 kg of boiled, cold potatoes;
- 200 g of wheat flour;
- 1 egg;
- 1/2 teaspoon of salt;
- oil for frying.
Ingredients for the stuffing:
- 4 hard-boiled eggs;
- 100 g of cream cheese;
- a bunch of chives;
- salt and pepper as desired.
To make pancakes from boiled potatoes, first we start with the stuffing. To do this, chop the eggs and chives, put them in a bowl, combine them with the cheese and season everything.
The next step is to prepare the dough. First, sprinkle 3 tablespoons of flour. In a separate bowl, mash the potatoes with a pestle and mix them with the egg and salt. Then gradually add all the flour to them.
Then we form pancakesso we take tangerine-sized portions of dough, flatten them in our hands and put the filling in the center of each of them. Then we seal the edges thoroughly. Coat the pancakes in the previously reserved flour.
Finally, fry the boiled potato pancakes in hot oil on both sides until golden brown (usually 4 minutes per side). Place the pancakes on a plate with a paper towel to drain excess fat.
The prepared pancakes can be served with your favorite salad. They taste great with or buttermilk.
