I’ve always thought that cooking beef was a mistake. As good as any other treatment, I was convinced, he would get better. If it’s good and reasonably tender, it’s best if you fry it briefly and until rare, if it’s good and tough, if you braise it long and until buttery (or minced and fry it until pink). I only thought submerging in a hot water bath was a good idea if you were after the soup.
